Spinach & Mozzarella

I love spinach and this dish is quick and easy to make if you need a quick side dish or a quick snack in my case! In Italy they used to market the frozen version of this dish and that's where the idea came from. Sometimes, my mum used to prepare this for us after we came back from school and always used to ask for a second helping. Give it a go, for two persons as a side or one person as a snack you will need...
  • 1 fresh mozzarella ball, diced
  • A handful of frozen spinach, defrosted
  • A pinch of ground nutmeg
  • Salt & pepper, to taste
How to...
  1. Squeeze out all the water out of the spinach and put in a pan.
  2. Turn the hob on high heat and add the mozzarella dice to the spinach.
  3. Add the nutmeg, salt & pepper and stir until the spinach is warm and mozzarella melted. Make sure you keep stirring continuously to avoid the melted cheese from sticking to the pan.
  4. Turn off the heat and serve hot!!

Caprese Beef Burger

We love burgers...who doesn't? I must say we do love making our own. When we feel like tasting nothing else but the juicy taste of beef, all we put in the burger is just good quality lean minced beef, salt & freshly ground black pepper...nothing else!! Here we simply served them on a toasted bun with a Caprese salad, fresh milky mozzarella, fresh ripe tomatoes and a fresh basil leaf! Give them a go...very easy to prepare!! For 4 burgers you will need...
  • 500g extra lean minced beef
  • Sea salt
  • Freshly ground black pepper
To serve
  • 1x 125g mozzarella ball, sliced
  • 1x ripe beef tomato, sliced
  • 4 fresh basil leaves
  • 4 sesame seed topped burger buns
How to...
  1. Put the beef in a bowl and season with salt & pepper. Mix well with your hands into 4 patties. 
  2. Grill for about 3 minutes on each side.
  3. On the same grill pan or grill, toast the split buns and put a burger on each bun, top with a mozzarella slice, tomato slice and a basil leaf.

Pumpkin & Courgette Lasagna


These delicious lasagne are made as the title obviously says with pumpkin and zucchine. Unfortunately during Halloween, pumpkins in the UK are just used for carving and the flesh discarded, which is a pity as they can be used in various recipes, from savoury to sweet. Here in the UK they mostly use the butternut squash which is similar to pumpkin. Well luckily, that said it was a very big advantage for us as we bought two massive pumpkins for just £1 each, chopped them into chunks and froze them in freezer bags as by the way they only appear during Halloween over here. Back to the lasagne, this is prepared with layers of grilled zucchine, sliced mozzarella, single cream and delicious pumpkin and bacon purée. The most time consuming procedure of this recipe is preparing and grilling the zucchine, which you can always prepare in advance if you like. If you do not have or you cannot find pumpkin you can do this with butternut squash. Also, if you want some delicious vegetarian lasagne just leave the bacon part out! If you omit the cream, the lasagne will end up very dry so do use it, you can use light cream or even milk thickened with flour instead. Anyhow here are the ingredients that you will need...

  • 4 large zucchine/courgettes, sliced lengthwise
  • 1.5 kg pumpkin, cut into large pieces
  • 3 mozzarella balls [375g], sliced
  • 100g streaky bacon, chopped into small pieces (optional)
  • 1 large onion, finely chopped
  • 3 cloves garlic, crushed
  • 150ml single cream
  • 250g lasagne sheets
  • Pinch ground nutmeg
  • Salt & pepper, to taste
  • Olive oil
How to...

  1. Firstly prepare the zucchine. Start by brushing them with olive oil, then grill them until soft. [The thinner you slice them, the quicker they will cook]. When done put them on a plate with kitchen roll and set them aside.
  2. Next fry the onion in 2 tbsp of olive oil until soft and transparent. When the onion is done, add the bacon and the garlic and cook until the bacon is golden. Set aside.
  3. Preheat the oven to 220°C. Put the pumpkin in a large oven tray skin side up, add a small glass of water. Bake in the hot oven for about 30 minutes. When cooked, carefully peel the skin off or scoop the flesh with a teaspoon.
  4. Next put the cooked pumpkin together with the onion/bacon mixture in a blender, add some olive oil and the nutmeg, season well with salt & pepper and blend until you get a smooth purée.
  5. Preheat the oven to 200°C.
  6. Now it is time to start layering the lasagne. Start by pouring some cream, then some pumpkin mixture, then lasagne sheets, then another layer of pumpkin purée, sliced zucchine, mozzarella slices, then start all over again and continue until you have used all of the ingredients. Be careful not to press the lasagne sheets too much, just put them loosely.
  7. When done, put in the hot oven and bake until the top is brown and bubbly. Around 30 to 45 minutes.

Focaccia with Caprese Salad


This is Amanda's favourite food EVER!! She could eat it all day, every day!! :)) In fact when I prepare a good Focaccia for her, I always get extra hugs & kisses xx :)) It is one of the easiest recipes to do, Focaccia is very filling and tasty and you can serve it or even fill it with loads of different ingredients. You can put olives and press them in or even small rosemary sprigs. Our favourite is do a plain, just scattered with coarse sea salt and then serve it with a nice Caprese salad. I love to split it in half, drizzle some extra virgin olive oil and put layers of freshly sliced tomatoes, fresh basil leaves and slices of mozzarella....just writing about it is making my mouth water!!! Enjoy it fresh out of the oven....give this a go and you will not be sorry!! You will need...

For the Focaccia
  • 600g Strong white flour ("00")
  • 300ml lukewarm water
  • Half teaspoon sugar
  • 7g instant yeast (1 sachet)
  • 1 tbsp extra virgin olive oil
  • Coarse sea salt, to taste
For the Caprese salad
  • 4 large ripe tomatoes, sliced
  • 3 mozzarella balls, sliced
  • fresh basil leaves
  • Extra virgin olive oil
How to...
  1. Blend the yeast in a measuring jug with 300ml lukewarm water, sugar and the olive oil. Leave it to stand for 10 minutes.
  2. Pile the flour into a volcano shaped heap on the working surface. Make a well in the centre and slowly pour in the liquid, start kneading with your hand and adding the yeast mixture until all the liquid has been incorporated.
  3. Knead into a smooth dough. 
  4. Roll the dough. Do not roll it too thin, leave it about 1cm thick.
  5. Place it in a well-oiled, high edged dish, poke it with your finger tips in even places, scatter to taste with the coarse sea salt and cover with cling film and leave to rise for about an hour in warm place.
  6. In the meantime preheat the oven to 180°C.
  7. After the dough has risen well, drizzle with some extra virgin olive oil put into the hot oven and bake for 30 minutes until it is golden in colour.
  8. Cut in squares and serve with the Caprese salad.

Pizza Margherita con Prosciutto Crudo (Parma Ham)


Another request...the proper Pizza Margherita from the Italian region of Campania where it was born. Famous pizzaiolo Peppino Brandi created this recipe in honour of Queen Margherita of Italy in June 1889, hence the 'il tricolore' [the 3 colours of the Italian flag. Green [Basil], White [Mozzarella] and Red [Tomatoes]. In the original recipe the Neapolitans use San Marzano tomatoes but unfortunately is very difficult to find here in the UK, so we used good quality canned chopped tomatoes. As for the mozzarella the original recipes uses Mozzarella di Bufala [Buffalo Mozzarella] but feel free to use good quality cow's milk mozzarella. When baking the pizza make sure that you only bake the dough with the tomatoes and cheese only. After cooked, then add the Prosciutto Crudo, basil leaves and extra-virgin olive oil. Here is the recipe for the dough, it is very easy and fast to do and is well worth it. The ingredients that follow are for 4 pizzas...Square, round or whatever shape you want to give it...obviously the original shape is round.

NOTE:  '00' flour is a very fine flour used in making pizza dough which is very fine and needs no sifting..available from Asda, Tesco and others. Click on the blue link for further info.

For the pizza dough:
  • 1 pkt of dried active yeast [7g]
  • 2 tbsp olive oil
  • 1 tsp sugar
  • 300ml lukewarm water
  • 500g '00' flour, or normal plain flour
  • 100g semolina, plus extra to dust
For the topping:
  • 2 cans good quality chopped tomatoes
  • 3 Buffalo mozzarella [about 375g], torn into small pieces
  • Fresh basil leaves
  • 150g Prosciutto Crudo [Parma Ham]
  • Extra olive oil
How to...
  1. To make the pizza dough, blend the yeast in a measuring jug with 300ml lukewarm water, sugar and the 2 tbsp olive oil. Leave it to stand for 10 minutes. 
  2. To make the dough you can easily make it using a food processor, just throw everything in and process until the dough turns into a ball. Otherwise, mix the flour and semolina and pile the mixture into a volcano shaped heap on the working surface. Make a well in the centre and slowly pour in the liquid, start kneading with your hand and adding the yeast mixture until all the liquid has been incorporated. Knead to a smooth dough. Cover and leave in a warm place for an hour to rise.
  3. Heat the oven to 220°C/Gas Mark 7. Knock the pizza dough back and divide into four or two, depending on the size of your pizza. If you are making it round, shape each piece into a ball and stretch it until you get a 12" round base. 
  4. Now, spread the chopped tomatoes on the bases, sprinkle the mozzarella and put into the hot oven for about 10 minutes or until done to your liking. When cooked get it out of the oven put 2 slices of prosciutto on each, tear the basil leaves on it and drizzle with good extra-virgin olive oil. 
Enjoy this simple but truly irresistible pizza. :)

Conchigliette con legumi, pancetta e pomodoro - Small shell shaped pasta with pulses, bacon and tomatoes


End of the month, everyone is on a tight budget, so I just opened our kitchen cupboards and roved around the kitchen shelves and scanned all the available ingredients and made up something in my head. This is the result. It is a cross between a thick soup and a pasta dish. With cold weather around us it turned out to be a real heart warmer for us. The quantities here are for 4-5 persons as it  is very hearty, so you can make it for your holiday dinners maybe, if not adapt the quantities as you like. So here it goes,
  • 200g concighliette [shell shaped pasta]
  • 100g bacon steak, diced
  • 100g mixed dried pulses [lentils, split peas, barley etc], soaked in water for about 12 hours or overnight
  • 1 can chopped tomatoes
  • 1 onion, finely chopped
  • 1 garlic clove, finely chopped
  • 1 red bell pepper, diced
  • 1 small dried chilli, chopped or 1/2 tsp chilli flakes
  • ½ teaspoon sugar
  • ½ teaspoon black pepper
  • ¼ teaspoon dried oregano
  • ¼ teaspoon dried marjoram
  • ¼ teaspoon dried thyme
  • Vegetable oil
  • 1 mozzarella ball [125g], diced
  • Fresh basil leaves
How to...
  1. Cook the soaked pulses in water first by boiling them for about 15 minutes and then simmering them for about 45-50 minutes or until soft. Set aside when done.
  2. Fry the onion, garlic and pepper on a medium heat until soft, stirring constantly.
  3. Add the bacon, herbs [not the basil leaves], black pepper, chilli and sit well.
  4. Cook until bacon is cooked well.
  5. Add the chopped tomatoes, sugar and simmer on medium heat for about 30 minutes. Stirring frequently. In the meantime cook the pasta.
  6. Add the pulses and cook for 5 minutes. Mix well.
  7. Add the pasta to the pulse/tomato mixture and incorporate well. 
  8. Ladle into bowls. Sprinkle with the diced mozzarella and hand torn fresh basil leaves.
